So light and delicious on a beautiful summer day!!!
2 1/2 cups almond flour
1/2 cup coconut palm sugar
2 eggs
1/2 teaspoon baking soda
Juice from 1 lemon
3/4 cup blueberries
1/2 cup coconut milk
1/4 cup coconut oil
Preheat oven to 350F.
Mix flour, sugar, baking soda.
Then mix in all remaining ingredients
Zest lemon if you want a little stronger lemony flavor.
Mix and bake in 12 cupcake papers for 25 minutes.
